The IFIN Cookbook

I want to expand my basic cooking skills and recipes with some of the best meals the IFIN community can recommend. Please post you recipes so I can try them and give a rating on cookability by an amateur and taste! I look forward to what is out there!

White sauce, here’s the closest one I could find to what I do. But essentially 50:50 plain yogurt:mayo, splash of vinegar (takes out the mayo flavor), large pinch of salt, a bunch of spices (different spices = different flavor). I like garlic powder, onion powder, black pepper. Tastes like ranch dressing, but fancy. Parsley, shallots, dill, chives, black pepper is another good combo. Dried spices work fine, so don’t go thinkin you need fresh and fancy (maybe not 1/4 cup of dried parsley, but 1 tbsp should be fine). The world is your oyster, experiment with it (I don’t recommend experimenting with oysters). If you use a pre-blended spice mix, check to see if it already has salt in it.

Let it rest for 15 min in the fridge for the flavors to blend.

You can put it on potatoes, rice, chicken, fish, pork, salad, wraps, tacos, use it as a dip (if you use greek yogurt to thicken it up).

As someone who worked in kitchens, cooks a lot and is into food science in general, I’d spend more time learning techniques for food generally rather than learning from recipes if that makes sense. To me, recipes are best for mixes of things like sauces, drinks or doughs for baking. When you know techniques generally it doesn’t really matter what you cook cause it comes out to be a kind of abstracted framework that you can changes things up with and experiment. Understanding the why and how makes it a lot more fun and interesting and I think you’ll learn much more quickly.

Food based cooking rather than recipe based is the mindset I think is best for learning I think, if that makes sense.
